    Michel Paris produces a delightfully elemental cider with the apples from his farm.

    The dominance of a tart apple varietal gives his ciders liveliness and freshness while conserving the roundness of the fruit.

    The brut is balanced, the demi-sec is tart, and the doux is sensuous.

    A certain delight lies in such simple pleasures!

    Gilles Barbé produces an artisanal cider with apples from his family’s four-hectare organic orchard and those of local producers.

    The color is almost pink, due to the lovely phenolic ripeness of the tannins.
