Faithful to the founding values of Bertrand Larcher, a new BREIZH Café, is all set to open in the Paris Batignolles District in early 2019 and will offer top-quality locally sourced and sustainably farmed produce. In addition to training for professional crêpe-makers and for crêpe-focussed events, the Crêpe training workshop offers customized services to groups and companies – all with the BREIZH Café hallmark. Located in the centre of St Malo, this 600 m² 2-level space has a 40-seat meeting room, a restaurant seating 80 with locally-sourced products, drinks and tastings areas, including a 50 m² terrace, hands-on workshops exploring culinary traditions through galettes and crêpes, as well as ciders, team-building offers, a shop with local products and all the tools and ingredients you need to make sweet (crêpes) and savoury pancakes (galettes) at home. This training school opened in 2018 and trains people destined to work in the crêpe-making business in France and abroad.
There is also a training restaurant open to everyone for meals, practical half-day workshops, and a shop with everything you need to make your own sweet (crêpes) and savoury pancakes (galettes) at home.
Bertrand Larcher is now growing his own apples, buckwheat and some vegetables organically. The 11-hectare BREIZH Café farm is located between Cancale and St Malo. The goal is to provide enough produce to supply his restaurants over the coming years.
He is focussing on: cider apples, buckwheat seeds from Brittany and elsewhere, and field vegetables.
