    Michel Paris produces a delightfully elemental cider with the apples from his farm.

    The dominance of a tart apple varietal gives his ciders liveliness and freshness while conserving the roundness of the fruit.

    The brut is balanced, the demi-sec is tart, and the doux is sensuous.

    A certain delight lies in such simple pleasures!

    Gilles Barbé produces an artisanal cider with apples from his family’s four-hectare organic orchard and those of local producers.

    His organic brut subtly combines fruit, bitter, and acidic.

    Compared with traditional ciders, the brut has a rustic character, and the moelleux (“mellow”) a more mature one.

    With œnophilic expertise and Armorican terroir governing his biodynamic cultivation, Eric Bordelet produces ciders and perries (sometimes called “pear ciders”) characterized by the purity of the fruit and an intense minerality.

    “Argelette” and “Granit” are highly structured vintages, whereas “le Sydre Tendre” and “le Poiré Authentique” reveal all the roundness of the fruit.

    Jehan Lefèvre produces an artisanal organic cider with local apples swept by the salty breezes of Saint-Cast-le-Guildo.

    The sec tastes of minerals, the brut is earthier and more organic, and the demi-sec is lively.

    The color is almost pink, due to the lovely phenolic ripeness of the tannins.
